#TheBlindList All journeys planned or unplanned are exciting. But what it is about the unplanned ones that has an intrinsic charm, that magnetic pull ? The fact that we start with a blank canvas, and paint it as we go through it or live it, not after it !
Let me share a little about my unplanned, and yet incredible journey of becoming a healthy baker and how that led to yet another journey which was also unplanned.
Becoming a mother puts a stop to your career. Perhaps, for some people.
Becoming a mother means shifting the goal post which needs re-mapping your original route into the path that does not exist. Yes, for many women like me.
With passable cooking skills, I started my healthy baking journey – dark, dreary and lonely 🙂 You navigate the ocean that is the Internet. You stumble along the way because there is nothing to guide you on what can one create with all our healthy ingredients, which have been so under-utilized in baking. One mopes a bit since the journey seems dreadful. But what do you do next – You make your own guidebook and begin to unravel the mystery of that journey – one ingredient at a time!
And over the years, just when you begin to realize how this unplanned journey has become an incredible experience and has reshaped your identity in the world, you receive a call to embark upon an unknown journey – of going to Singapore, to talk about healthy baking and its link to community impact work, done by us, the Ovenderful Mom Bakers Community, at the Facebook forum, in front of Sheryl Sandberg.
Unplanned ? Yes, I didn’t plan to make OMBC reach a global platform.
Unforeseen? Yes, I didn’t foresee it become a phenomenon to reckon with.
Uninhibited? Yes, I didn’t inhibit or conceal the joy of being a part of this movement.
When we #SayYesToTheWorld beautiful things happen. Some remain etched in the heart as your thoughts. Some break the shackles of the mind and create their own purpose.
On that note, let me share a recipe that arose out of the need to break shackles of tradition and begin the journey of “baking healthy” for festive season – Coconut Bran Bites!
Recipe –
2 cups flour – 1 1/2 cup wheat bran ( you can use oat bran too) and 1/2 cup wholewheat fllour
1 cup raw unrefined sugar
1/2 cup dessicated coconut
100 grams melted butter
Method –
Cream the butter and sugar well. Add the coconut and mix well. Add the flour-mix slowly. Bring the mixture together.
if it doesnt come together entirely, add a spoon or so of milk.
Keep in the fridge for 1 hour. Shape it into rounds and place on baking tray.
Preheat the oven at 170 degrees for 10 minutes. Bake the cookies in it for 15-18 minutes.
Remove and store.
