Fighting THE battle & Vegan Heart-Healthy Biscuits

My mother has been fighting cancer for over a decade now. Since 2005. The treatment is not easy especially since it ravages the body in many ways and weakens the immune system too. To be able to fight such a battle over and over again means having a will of iron like a warrior and the positive mindset that shines so brightly that it can make the Sun’s light seem dim.

In my own way I want to help her to fight this battle hard and always remain healthy and happy. And so one of the small things I did was to try and develop a recipe for heart healthy biscuits that can give her an energy boost as well as strengthen her heart’s function a little more. Small steps. Big impact. That’s what our skills and knowledge should be used for.

What do you think is in this biscuit ? They are super crunchy.

Recipe here – Vegan Heart-Healthy Biscuits

1 cup rolled oats, dry roasted and then roughly grinded

1/4 cup wholewheat flour 

2 tbsp almond butter

2-3 tbsp almond milk

Chopped dried cranberries , almonds – as much as you want

A handful of mixed seeds – sunflower, melon, chia, flax

1/2 cup coconut sugar

 Method –

Super simple ! Basically mix all the ingredients together except the almond butter and milk. At the end rub the butter into the mix and add the almond milk to bring it together. Put it in the fridge for 2 hours. 

Take it out. Make the shapes with your hands. Place them onto a prepared baking tray. 

Bake for 15-20 minutes in a preheated oven , 170-175 degrees C ( this might vary from oven to oven). 

Cool off entirely and store in air tight container.
