Bake for gratitude & Wholewheat Jowar Chocolate Pillow Cookies

We bake for love and loved ones throughout the year, don’t we?

But as another year comes to a close and we are hovering over the new one, it is the time to bake for unsaid but heartfelt gratitude. It is the time to bake for unexpected but joyful moments. It is time to bake for new friends we have found when we didn’t even know that we were still capable of forming such friendships and for old friends who have found us even when the social media channels didn’t connect us.

Baked these gorgeous Wholewheat-Jowar Chocolate Pillow Cookies which have a Peanut Butter cookie centre, for all the above reasons for the lovely team of Jus Amazin to thank them for their excellent and inclusive healthy products, but also for their support before, during and after #OMBCDiscover2019 đꙂ

What a year of discovery this has been and here is to many more such years ahead!

So here is the recipe – do try it out and let me know how you liked it!

Chocolate Cookie dough

  • 1 cup wholewheat flour
  • 1/2 cup jowar flour
  • 1/3 cup unsweetened cocoa powder
  • 1 cup cane sugar
  • 150 gms unsalted butter

Beat the softened butter and sugar. Add the flours and cocoa powder. Mix well but do not over-knead it. If it seems crumbly, add some tablespoons of cold milk to bring it together. Keep in the fridge for 1 hour.

Peanut butter dough –

  • 3/4 cup peanut butter ( I used Jus Amazin’s all-natural)
  • 3/4 cup cane sugar
  • 1 1/4 cup wholewheat flour 
  • Milk to bring it together, if needed

Beat the softened peanut butter and sugar. Add the flour. Mix well but do not over-knead it. If it seems crumbly, add some tablespoons of cold milk to bring it together. Keep in the fridge for 1 hour.

Assembling –

Make small round balls of the peanut butter dough. Then roll the chocolate dough into circles and place the small round ball in the centre. Wrap the chocolate dough to cover the peanut butter cookie dough ball in the centre.

Press the shaped cookie gently with the hand and then place on baking tray.

Bake in a pre-heated oven for 15 minutes or until it bakes through. Allow it to cool fully on a wire rack and then store in an air tight container.
