The Vegan Amaranth and Hemp Powder Ribbons

A few days ago I had shared a thali full of ingredients – flours, leaves, spices. Here is what I finally baked with those – I am not sure what I might call these except Amaranth and Hemp Powder ribbons!

I made the dough and like a child who tries out a new toy I was eager to try out a specific shape that is fitted into the Murukku maker. I wanted thin flat sticks which could be spread on the baking tray and baked. And look at how beautifully they turned out. This picture is a few days old since this entire jar is almost empty now!

It could be by far one of the best flavour combinations I have tried so far – to recap the ingredients for you, there was wholewheat flour, rice flour, black sesame seeds, salt, oil, amaranth leaves, hemp powder and rasam powder. Super different flavours but stunning when they come together!

So here is the recipe for you – the vegan Amaranth and Hemp Powder Ribbons!

1 cup wholewheat flour

1 cup rice flour

1 tbsp hemp powder

1 tsp rasam powder ( you can add more if you want it spicier or even red chilly powder in addition to this)

1/2 tsp black sesame

Salt as per your preference

2 cups Amaranth leaves chopped

1/4 cup oil

Warm water

Method – Mix the flours and spices. Add the chopped amaranth leaves and hemp powder. Add the oil and mix with your hands. Add warm water to just bring the dough together. Let the dough rest for 30 minutes.

You can cut it into any shape after rolling it out super thin. Or you can do what I did – put it inside the murukku maker and get a different shape!

Place it on the baking tray. Bake in a preheated oven for 10-15 minutes or until crisp, at 170 degrees C.
