Vegan and Gluten-free Sweet Potato Bake

One of the things I get asked about the most is Baked Meals – Lunches or Dinners which are baked, healthy and wholesome. Most of the recipes that one finds for baked dishes online are loaded with cheese and even all purpose flour based sauce. While cheese can be part of a dish ideally it should not smother the other flavours in the dish.

One of the interesting baked meals I tried last week was this – Baked Sweet Potato, with a filling of herbed rice and sauteed broccoli. I was sceptical about it being too bland for my taste but the right mix of spices and a generous topping of onion flakes made it super delicious. And very filling.

So here is the recipe to give you an idea of how this nutritious baked meal can be put together!

Recipe –

2 Sweet Potatoes

1 tbsp oil

The spices used for Sweet Potato – salt, black pepper, dried thyme and onion flakes, all proportions as per taste preference

Cooked Herbed Rice ( It is simply cooked rice that has been sauteed in a tsp of oil, and seasoned with salt, black pepper and dried thyme – you can choose any combination of spices but I chose these since that was the seasoning for the sweet potato too)

Sauteed Broccoli

Method – Wash the sweet potatoes nicely and pat them dry. Brush them with oil and place them in an oven-safe baking pan. Sprinkle salt, pepper, onion flakes and thyme. Ensure that they are coated well with these on all sides.

Bake them for 40 minutes in the oven at 180 degrees C. Take them out. Slit and then scoop out the centre of the Sweet potato. Fill this with herbed rice and top it with sauteed broccoli. Put it back into the oven and bake for 10 minutes at the same temperature for it to come together.
