Baking with kids & gluten-free baked vegan Lauki bites

For as long as I remember, my little boy has been interested in baking and cooking. It is difficult to say who sowed the seed for healthy baking – him in me, or me in him. The journey has certainly become easier because of his adaptability to the taste of various flours and natural sweeteners. I don’t credit myself for it – I believe I had a supporting role to play there. All children are naturally curious. So thankfully Nature has given them that amazing quality. They want to explore and experiment. Unlike what many people think, it is not age-restricted. It is a matter of how much we nurture that curiosity and then again, what we do as parents to figure out how to nudge them towards their interest areas.

So what started with small things like break the walnuts, zest the orange, sift the flour and more such seemingly easy tasks, the son moved onto being able to fit pastry crust for tarts into pans, whisk or beat any batter that I gave him and to being able to hold his own even at the age of 7 1/2 years, in his first and now second Instagram Live too, with me.

And so for those who missed the Instagram Live the kids and I did for Shumee Toys, here is recipe for the baked Lauki / Bottle Gourd Bites that we demonstrated.
It’s yum, nutritious and quick to bake!

Recipe –

1 cup grated lauki / bottle gourd

1/4 cup oats flour

1 tsp Himalayan pink salt

1 tsp black pepper

1 tsp thyme

Method –

  1. Preheat the oven for 10 minutes, at 160-165 C degrees.
  2. Squeeze the grated lauki to remove the water in it.
  3. In a bowl, add the lauki and the oats flour.
  4. Mix very well so that the oats flour makes the mixture easy to shape with hand.
  5. Add the salt, pepper and thyme.
  6. Brush a baking tray lightly with oil.
  7. Make oval shaped bites of the mixture.
  8. Place on the baking tray.
  9. Bake in the bites for 10-15 minutes at the same temperature until it crisps up.
  10. Serve hot.
