Choosing smaller brands & Gluten-free Vanilla Cake with Dark Chocolate

Even before the pandemic hit us, through Ovenderful and OMBC( Ovenderful Mom Bakers Community) I have tried to identify and partner with brands that are local and homegrown, and have excellent products for using in healthy baking.

My search as led to find many such treasures hiding across the length and breadth of the country. Just waiting to be found. Just waiting for it to be their turn. As bakers and consumers it is our job to not go by glittery marketing that some brands use to grab eyeballs, but to scratch the surface and look for great quality products.

In my recipe below you will find two such products – both are my recommendations based on my own experience and trials.

Here it s – The Put it in a bowl and pour it in a skillet kinda cake!

There is so much yumminess that you see in that 5-flour mix to create a tea cake that is gluten free naturally, contains unrefined sugar and is topped with a generous portion of the dark chocolate that I have spoken to many of you about in my Live.

I don’t do sweet bakes for home on weekdays because I don’t believe in sweet snacking becoming the major way of satisfying the 4 pm hunger pangs. But the pandemic has taught me to take it each day at a time. And so I baked this today to pray and hope that this month onwards things become better for all of us in 2020.

Flour mix – Mills and Browns

Dark chocolate – Sihi Chocolaterie

Skillet – @amazonbasics india


Recipe –

250 gms M&B’s Vanilla Cake Mix ( it has a natural mix of banana flour and millet flours primarily, with some brown rice flour too)

1/2 cup milk

1/4 cup coldpressed flavourless oil

2 free range eggs ( for the eggless version use 1/2 cup curd and for vegan use 1/2 cup applesauce)

1 tsp Vanilla extract

Chopped Dark Chocolate

It is slightly lower on sweetness levels and contains unrefined sugar. It worked fine for us. But if you want it more sweet you can add 2 tbsp of coconut sugar.

Method –

Beat the eggs in a bowl. Add oil and milk, and whisk well. Add the extract. Mix well. Add the flour mix and beat very well.

Pour into a skillet or any baking pan. Top with dark chocolate.

Bake for 30 minutes at 160 degrees C.
