Many years ago, when someone shared a situation with me or a life altering experience, my spontaneous response was ‘I understand’. And I meant it in the sense that I had the right intention. I wanted to comfort that person in their challenging times. The response seems empathic. And it was.
BUT, I became mindful. I listened deeply -to others and my own words. I realized that a change of response was long overdue.
Thereon when someone shared a situation or experience that I had not gone through, my response – ‘ I can’t imagine what you are going through’. To my own ears and heart my words sounded more authentic. Someone else might think this is less empathetic. But to me it is honest. When my daughter got diagnosed with Type 1 diabetes, many said ‘I understand’. And they truly meant to comfort me. Their words gave me solace.
A few said ‘ I can’t imagine what you are going through’ . And they also truly meant to comfort me. But their words gave me strength.
I know without a shred of doubt that in both cases they did it out of love and friendship. As did I when I did it. But now I try to make that journey every time- from offering solace to strength.

And now I have recently embarked on a journey to work much more than I have in the past with low carb flours that might be suitable for healthy bakes even when they are consumed rarely as snacks and in moderation.
So here are my ‘Can’t imagine there is Broccoli in these’ crackers! Yes that’s pretty much the name I would have for it – who would have thought that the delicious Broccoli would taste yum in Low Carb Vegan Crackers.
And then again who would have thought that a fish masala would enhance the flavour in a vegan bake. But both the things did happen. And what a discovery it has been.
Incidentally my preference when I try new flours is always a savoury option. I am not entirely sure why that is – perhaps the natural tendency to deviate from anything sweet that I applied for myself is showing up in this form!
Recipe –
50 grams almond flour
10 grams khapli wheat flour
2 florets of grated Broccoli
Salt and Keya Coastal Fish Masala as per taste preference. You can use any other spices.
1/2 tsp flavourless oil
Water to bring the dough together
Method –
- Mix the flours well.
- Add the salt and masala.
- Saute the grated broccoli in the oil.
- Then add the grated broccoli to the above flour mix, to be spread uniformly.
- Add water slowly to bring the dough together. Once the dough comes together, keep it aside in the fridge for 30 minutes.
- Preheat the oven at 170 degrees C for 10 minutes.
- Take the dough out and press it thin onto a silicon mat.
- Cut it into shapes of your choice and place on flat baking tray.
- Sprinkle black sesame seeds and press them onto the pieces.
- Bake at 170 degrees C for 20 minutes or until crisp.
- Cool off and store in air tight container.
