About Type 1D and Low Carb Gluten Free Almond Coconut Blueberry Mini Muffins, with stevia

We do a sweet treat every weekend. The whole week none of us eat anything sweet except for fruits. And on the weekend we aim to bake or make one sweet treat that everyone can eat – including my little daughter who was diagnosed with Type 1 diabetes, four months ago- so it is always a treat using plant based sweetener, Stevia.

The reason for sharing this post is to explain how misunderstood Type 1 D is because it is called diabetes. Lack of awareness leads to lack of empathy.

Awareness brings light and that seeps in through the window of our hearts and minds. To make us kinder people. What people say and think – How can such a little child get sugar? Did you feed her too much sweet stuff that has caused it? The child must be stuck to the screen and not getting enough exercise. After all, diabetes is a lifestyle and food linked issue. Right? WRONG.

Type 1 Diabetes is not that. It is an autoimmune disorder. The child does not EAT sugary food to get this. The mother does not make the child inactive for him/her to get this. It happens. The children who eat the healthiest of food or are most active also get. No one knows why or how. The body’s overactive immune system attacks the beta cells in the pancreas and destroys them. These are the cells that produce insulin – which is the hormone to keep the blood sugar in control.

That’s how even a breastfed baby can get it. So no, it’s what the baby eats or the mother feeds it.

Perhaps we could call it by another name to avoid the confusion? Maybe the medical fraternity can decide that.

But you and I can decide is to not judge. To not presume or assume. To not exclude. To not single out. And also decide to become more aware. To become more accepting. To simply become a little MORE of what God made us all – human.

Flours used – Almond and coconut

Sweetener – Stevia

Recipe – Almond Coconut Blueberry Mini Muffins

30 grams almond flour

1/2 tsp baking powder

15 grams coconut flour

1 egg

4 microspoons Stevia powder ( I used this one)

1/4 cup coconut milk, unsweetened

1 tbsp cream, unsweetened

Blueberries, fresh. You can use any berries that are in season. I had a ton of these that needed to be used and its a diabetic friendly fruit so I decided to include it.

Method –

  1. Whisk all the dry ingredients together – flours, baking powder, baking powder and stevia powder, well.
  2. Beat the wet ingredients together – egg, coconut milk and cream.
  3. Add the dry mix slowly to the wet mix, and fold gently into it.
  4. Add the blueberries and mix well.
  5. Spoon the mixture into mini muffin liners. I got 11 mini muffins out of this mix.
  6. Preheat the oven at 160 degrees C.
  7. Bake the mini muffins in the oven at the same temperature, for 20 minutes.
