Simple Tasks…Baked Gluten-free Date and Walnut Squares (contains no white sugar, no egg or baking powder/soda)

IMG_6258.JPGGive a child a simple task that involves some work , some fun and they can keep themselves engaged with it for such a long time. Amazing, absolutely wonderful to see it – I asked my son to help me wash, clean and dry some of the baby’s rattles and he spent over an hour doing just that. I might have done it faster – but then I wouldn’t have realised that enjoyment is far better than efficiency  And so I gave the task of mixing the flour with the dates and walnuts to my little boy when I was baking these yum squares.

Baking with Gluten-free flours is not an easy task. It takes a lot of experimenting, a lot of courage and a lot of thought process, to bake something that will be delicious and full of nutrition.

Here is the result of one such delicious baking experiment that took shape when I decided to check out the Grow Fit Gluten-free flour mix.

Recipe –

1 1/2 cups of the Gluten-free flour ( mainly contains Bamboo Seed, Amaranth Seed, Soybean, Arrowroot, Oats, Flax Seed)

 

3/4 cups Coconut Sugar

Dates and Walnuts chopped

2 tbsp Honey

3-4 tbsp Ghee/melted butter

Mix the dates and walnuts into the flour and coat them well. Add the coconut sugar into this mix, using a whisk. Add the butter or ghee. Finally add honey to bring the dough together. Press it into a baking tin that is greased and lined with baking paper.

Bake for 15 minutes in a prebaked oven at 175 degrees C. Open it, slice it into squares while it is still soft and then put it back into the oven for another 10 minutes of baking.

Cool and remove the slices.

Playing with Soil…and Earthy flavours of the Baked Butter-free Kasoori Methi-Ajwain Matthi

I took my son to a place close to home, where the children were going to spend a couple of hours working on a patch of garden. I went with the idea of getting him to expend his energy since the summer vacations are on. As some of you might be aware, a restless 4 1/2 year old with unused energy is a different kind of person altogether !

For the first 15 minutes I simply looked on and prayed for him to remain engaged for the entire duration of 2 hours. I wondered if I had done the right thing – gardening and connecting with the soil, as well as nature are immensely therapeutic but will he want to do it again?

But as I kept watching him, my mind was whirling with thoughts….The world we live in – we have to teach our kids to play in mud, to wonder about the magical creatures living in the soil, to touch leaves without hesitation, to feel the wonder of planting a seed, to squeal with delight when a caterpillar crawls on their little hand.

And when you do that, the world we live in changes…A little each time, because we start removing the layers of indoor dust that’s settled into our own souls as well, to uncover the glistening beauty of outdoors.

That’s what nature does for us – puts us back right where we belong.

And by the end of those 2 hours, I think both of us had been put back where we belong – more me, than him. Because for a child, it is so much easier to sense that belonging. But for a jaded adult, it takes a while to revisit the deep recesses of the soul, scrape off the dirt and uncover the roots.

On that note, let me share something that is earthy in flavour and contains ancient grains.

They turned out so crisp and crunchy in texture, that I am looking forward to baking many more things with this flour super soon.

Baked Kasoori Methi- Ajwain Matthi / Mathri ( butter-free)

1 cup of the Low-Carb Flour, Ancient Grain

Kasoori Methi and Ajwain as per your taste preference

2-3 tsp salt, 1-2 tsp red chilly powder, 1-2 tsp homemade garam masala

3-4 tbsp oil

Hot water for kneading

Mix all the dry ingredients well. Add the oil and mix with hand. Use hot water a bit at a time and then mix well. Knead it well and leave it side for 10 minutes. Shape it into rounds and bake at 180 degrees C, for 20 minutes or until crisp.

Christmas Baking Story 2 & Wholewheat Jowar Apricot & Almond Cookies

What does a child want ? Nothing in the world will be a perfect answer to that question. You will think it will be the “bigger” things – love, security, appreciation, family, education. You will also think that it could be the “smaller” things – toys, chocolates, candies, shoes, clothes.

Well, I am not an expert on understanding children and their psychology, but I think often we overlook the fact that perhaps, just perhaps, a child wants things that are not categorized, things that cannot be slotted into any form of definition.

Could it be a fleeting moment of joy when they see their friends after a school break? Could it be the chance to savour a few minutes of having the slide at the park, just to themselves ? Could it be the thrill of hearing their voices fill up a festive song ? Could it be the anxious anticipation of few seconds from when the school gets over till when they actually see their mother/father across the gate to pick them up ?

Why is my post talking about this ? It is because when I visited Ashraya Initiative for Children( a picture from that visit is shared above), an NGO that works with 200 slum children, with the Pune bakers in December 2016 as part of the “Bake a Sunshine Cake” initiative, I found myself reflecting about what are the things that bring such a warm smile on the faces of children living in abject poverty and why we adults are not able to muster up a smile despite the comfort we live in…

The only answer that connected with me was – because they keep it simple. It is that easy to be happy ! And so simplicity is the approach that I always follow when it comes to my healthy bakes. Presenting one such simple bake here for you to put together easily – Wholewheat Jowar Apricot Almond Cookies.

Ingredients – 

  • 1 cup wholewheat flour
  • 3/4 cup jowar flour
  • 1/2 cup chopped almonds
  • 1/2 cup dried chopped apricots
  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/2 cup cane sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract

Method –

Preheat oven to 170 degrees Celsius. Mix together the flours, almonds and apricots.

Beat butter and both sugars until light and fluffy, 1 to 2 minutes. Add the egg, beating until incorporated. Beat in the vanilla extract.

Add the flour mix slowly and mix without over-beating.

Scoop the dough using a spoon and drop them onto the baking tray, 2 inches apart. Add a chopped almond and apricot on top, and bake them for 15 minutes.

Cool them off and store in air tight containers.

Wholewheat Vegan Zero-Fat No-yeast Lavash topped with Kadale bele (chana dal) chutney and roasted peanuts

For as long as I remember I haven’t been fond of Chana Dal and I love anything that is crisp ! I have made excuses so that I don’t have to eat that particular dal despite a whole lot of effort from my mother.

But as I grew older and I tried many versions of it – a few that did seem better and something that I could probably get used to. But the one version I discovered when I moved to Bangalore and absolutely loved was the Kadale Bele Chutney / Chana Dal Chutney and I was finally a convert – I could eat a whole bowl of it, not just with Dosa or Idli but also with a chapati !

So for a while I was thinking of where I can fuse it into my baking since it is such a traditional Indian recipe. But then healthy baking for me has been largely about being able to incorporate as much of the local elements as I possibly can. What I also discovered while trying to dip a cracker ( yes, my love for the crisp) into the chutney and eat it was that there was a way to combine these.

That is when I decided to bring together this bake for the OpenOut event that I hosted at home.

For the Wholewheat Zero-Fat flatbread/Lavash

INGREDIENTS:

– Whole wheat flour: 2 cups

– Red chilly powder: 2 tsp

– Salt: 2 tsp

– Jeera powder : 1 tsp

– Warm water: 1 cup

– Black sesame seeds : 3 tsp

Add flour, salt, chilly, jeera powder and mix.

Add the black sesame seeds and mix through the dry mixture well so that it is uniformly present.

Add 1 cup of warm water and knead into a smooth soft dough. Cover with a damp muslin cloth and let the dough rest for 30 mins.

– Make small balls of the dough of uniform size.

– Dust them one at a time and roll it out into a round or square shape. Make sure to roll it out as thin as possible.

Preheat the oven to 175 degrees Celsius.

Brush the baking tray lightly with oil.

Place the round / square on top of the tray and cut it into squares with a pizza cutter ( you can choose to make any other shape with cookie cutters too).

Bake for 10 to 12 mins or until light brown and crisp. Turn them around mid way to allow even browning on either side.

Take it out and cool completely.

For the Kadale Bele chutney ( I used this one as per our taste buds, if you have your own traditional recipe, feel free to use that).

Roast about 1/2 cup kadle bele or chana dal , 4 dry red chilies, 4-5 fenugreek/methi seeds, 3-4 curry leaves and 1 pinch of hing/asfoetida in 1 tsp oil. When this is roasted ( be careful not to burn it), cool it off well. Then dry grind it with 1/2 cup freshly grated coconut and 1 tsp of salt ( you can adjust this to your taste preference). Keep this aside.

To assemble – 

Once the flat bread pieces are baked through , with a spoon or knife spread the chutney on top of them and top it off with dry roasted peanuts. If you want to retain crispness, after the assembling place it into a preheated oven for 2 minutes at 160 degrees Celsius, before serving.

Ovenderful Healthy Baking OpenOut

I chanced upon OpenOut’s page when I was browsing through some information about events in Bangalore – not the run-off-the mill and done-to-death variety. But something unique that connects with what I enjoy doing and sharing information about – Healthy Baking. To add to that, after experiencing so many occassions to share this, I have come to the conclusion that sharing it with  a small and deeply engaged set of people, is far better than talking to a wide but only partially interested audience.

15027797_669297166582163_2752337623110773124_nSo I spoke to Arun, who is the Founder of OpenOut and after some discussions, I knew I was ready to host an OpenOut at home – the broad theme was Healthy Baking, there would be 8-9 individuals who will be a part of it and I will be baking a healthy brunch of 8 dishes inspired from flavours across India.

And what a lovely event it was – to be able to meet new people personally in a world that centers around virtual friendships, to be able to bake for them just as you would for your own family and friends, and to be able to find so many diverse and lively conversations that you still smile about when you recall them! That’s what made this such a special gathering of amazing people 🙂

Below are the dishes and a brief description and I will be sharing the recipe of the first one which is the Malvani Chicken Curry Quiche.

Malvani Chicken Curry Quiche – West
Malvani flavours are reflective of a spice mix that is common across the Western coastal area of India. It has a distinct taste and this quiche brings out that, with chicken flavoured with homemade Malvani spice.The quiche pastry crust is healthy and made with wholewheat.
Baked Rajma Wholewheat Wraps – North
Rajma chawal is every North Indian’s staple lunch option ! The garam masala and warm spice mix makes it a treat to eat. The wholewheat wraps are filled with this yummy goodness that is reminiscent of the North.
Vegetarian Baked Goshtaba – North
This is a dish from Kashmir and usually made with minced meat and is fried. But the vegetarian one is as delicious because it includes the same flavours and healthier because it is baked with minimal oil. The balls are made of Soya, Mint, Chana Dal and Curd.
“Ragda Pattice” Bake ( A Chickpea-Potato based Rice Bake) – West
This yummy street food is an integral part of Mumbai. The crisp Potato Patty topped with chickpea / chana gravy to make it a delicious meal in itself. Here is my take on making it a complete meal by including rice into it and replicating the actual flavour.
Baked Begun Bhaja ( Brinjals – East
This is a delicious appetizer from West Bengal made with Brinjal and fried to perfection with the spice mix and mustard. To keep it healthy, here is a baked version which allows the brinjal slices to absorb the flavours and retain them even in the baked form.
 
Wholewheat Flatbread topped with Kadale Bele Chutney and Roasted Peanuts – South
One of the most delicious chutneys from the South of India takes a new form. It is the Kadale Bele chutney which is filled with flavours of Chana Dal and fresh coconut, along with a twist of oven roasted peanuts, on a crisp flatbread made of wheat.
Coconut Cream Tart in a Dark-Chocolate Ragi Crust – South
Tarts are usually shortcrust pasty which encase a sweet filling – here is an usual one for you to try out, using ragi and coconut , which are staples of the Southern region of India and mesh together beautifully !
Baked Phirni with Saffron and Jaggery – North
A delectable rice pudding from the North of India made healthier with the baking process and jaggery – it is almost entirely free of Ghee/Butter/Oil except for 1 small tablespoon of it ! So enjoy it guilt-free !

Malvani Chicken Curry Quiche 

  • Crust Pastry ingredients –
  • 2 1/2 cups Wholewheat flour
  • 1 cup cold butter cut into cubes
  • 2 tsp of garlic powder
  • 1 tsp Salt
  • 2 tsp homemade Malvani spice mix
  • 3-4 tbsp of cold water

Filling Ingredients –

  • 2 eggs
  • 1 cup milk
  • 1 cup grated cheese
  • 1 cup sliced Onions which have been caramelized
  • 2 – 3 tsp of Salt
  • 3 tsp of homemade Malvani spice mix
  • 2 cups of Chicken that has been boiled, sliced and lightly sauted in a tsp of oil, crushed garlic, 1 tsp of salt , 1 tsp turmeric and 1/2 tsp of the homemade Malvani spice mix.
  • 1/4 cup of chopped capsicum

Method

    1. For the crust- Put the flour in a bowl, Malvani spice mix and add salt and garlic powder.
    2. Rub the butter cubes slowly into the flour till it resembles bread crumbs. Do not knead it, if you want a flaky pastry !
    3. Add cold water, 1 tbsp at a time and your dough should come together.
    4. Place the dough in cling film and put it in the fridge for at least 20 minutes
    5. Take it out after that and roll it out onto a cling film sheet
    6. Place it into a tart pan and prick it with fork.
    7. Blind bake it for 20 minutes at 170 degrees Celsius.
    8. For the Filling – In a pan, sauté the sliced onions and caramelize them.
    9. Add the chopped capsicum and precooked chicken turn by turn.
    10. Take the pre baked tart-shell and line the base with grated cheese, caramelized onions and chicken pieces.
    11. In a mixing bowl, put the eggs and milk, as well as the seasoning. Mix well.
    12. Pour this mix into the tart.
    13. Bake the quiche at 170 degrees Celsius for 20 minutes and serve hot !

What Ovenderful has been upto and the Gluten Free, Eggless Dark Chocolate Ragi Tarts with Coconut Cream

You might be wondering why it has been so quiet at my end. Well, it has been a very busy month in many ways. The reason for the same is that I have been involved with 4 events all of which are unique and special.

I loved being a part of each of these experiences and from all the invitations that I receive, why I choose to be a part of these is entirely because of their uniqueness and the depth they added to my own journey as a healthy baker and blogger. They opened up a new and wider perspective for me as an individual and Ovenderful as a social enterprise.

Here’s a quick look at 2 of those 4 events ( the remaining 2 will be covered  –

 

  • Panel Discussion by Mom Bloggers: Bloggers Adda by Mums and stories at Bhive Workspace in HSR, Bangalore, was about bringing together 4 moms, including me who were blogging in different spheres and how they had been successful at it.

  • Collaborative Baking for Kritagyata Trust

Over 35 bakers came together to bake for 3000 children in 27 government schools in rural Bangalore, to make Children’s Day a special one for them. When Aruna, who is the Founder of Kritagyata Trust got in touch I knew there had to be a way to make this work.

So here is what we did ! I think Children’s Day had a new and special meaning for me this year simply because I believe at some level we were able to touch lives, unknown to us so far and yet find a connect that is so heart-warming.

As a tribute to these two events both of which helped me reach back within my soul to rediscover what I truly love – writing ( and hence blogging ) and baking for community impact, here is an earthy, close-to-the-roots kind of recipe :

Gluten Free and Egg Free Dark Chocolate Ragi Tarts filled with Coconut cream and grated dark chocolate ( Baked for an event that I will share in my next post)

For the tart –

1 cup ragi flour
1/4 cup jowar flour
60 grams cold unsalted butter
1/2 cup  Coconut sugar

1/4 cup Dark chocolate ( grated )

2 tbsp cocoa powder

The mixing process is exactly like it is for the pastry crust of tarts – Mix the flours, coconut sugar, dark chocolate and cocoa. Then slowly rub cold butter into this mix till it looks like bread crumbs or comes together. Keep some milk in the freezer to use incase you need to bring the dough together. Cling wrap this and keep it for 2-3 hours in the fridge. Preheat the oven to 170 degrees Celsius for 10 minutes prior to baking. When the dough is ready to be baked, take it out and press it into muffin trays to give it the shape. Bake them for 20 minutes till it becomes crisp.

For the filling – Mix together some fresh coconut cream, liquid jaggery, grated coconut and grated dark chocolate. The proportions will depend on how sweet you want it, how ‘coconuty’ and how liquid in texture !

3/11 City- Florence/Firenze, 3/11 Healthy Bake: Schiacciata Alla Fiorentina

I am not a painter, not one by a far stretch of imagination. My mother’s committed efforts to have a drawing and painting teacher come home and teach us regularly, given her own creative inclination did not yield much result. I can claim to have made one painting at the end of our learning phase. Yes, I could draw to some extent – drawings of science experiments for my school files.

So given my painting skills one would think it strange that one of the things I thoroughly enjoy is exploring museums with paintings by painters, historical monuments and churches, and sculptures made by artists of a bygone era. So a city like Florence is a dream for me – because it has everything that one envisions as a person who loves history and art ( as an observer). The cobbled streets, the eclectic mix of street-side sculptures, the imposing Duomo wherein resides Michael Angelo’s masterpiece, the people from different walks of life, the winding roads that you can climb up and down as you gaze at the city below you.

Florence or Firenze as it is called in Italian, made it to my Top 3 favourite cities right from the moment I stepped in. And despite the fact that it was 7 years ago and I havent had a chance to revisit, it has held its place in my heart – because while some cities flaunt their art and past artists unabashedly, thus enticing tourists from across the world to come over, there are a few rare cities that stand in quiet dignity because the calibre and depth of what they hold does not need a mass of tourists. It needs a discerning and involved traveller:) And Florence is one of those.

So from the heart of Florence, as a tribute to its beauty is my bake – the Schiacciata Alla Fiorentina, which is essentially a Florentine Sponge Cake, but a healthier version of it. 

INGREDIENTS

  • 1/2 Jowar Flour
  • 1/2 Rice Flour
  • 1/2 All purpose flour
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • Zest and juice of 1 orange
  • 3 large eggs
  • 1/2 cup warm milk
  • 4 tablespoons oil

Preheat the oven to 170 degrees C. Butter your  baking pan or you can choose to bake them as small cupcakes like me.

Add flours, sugar, baking powder, the juice, zest,milk, eggs and oil. Beat with a mixer until thoroughly mixed together.  

Add the batter to the pan or the cupcake liners and bake for about 30 minutes or until it is completely baked ( I added some almonds as an after-thought, so you can do that if you want as well)

Cool it and serve.

Vegan Diwali Treat? Yes, Please! (Published first on Pyjama People)

There are hardly any Vegan Indian sweets to speak of, or to taste. While many Indians are vegan, gluten, dairy products, and sugar are pretty much the main ingredients to all our sweets. So what’s a vegan to do on Diwali?

First, remember, history’s got your back. There are a few gluten-free Indian sweets you can gorge on.

Boondi Laddoo are made made entirely with gram flour or besan entirely, plus who doesn’t love this classic, right? Similarly, Coconut Barfi or Laddoo with its grated coconut base makes it fully gluten-free!There are also other usual suspects such as Besan Laddoo, which is made with gram flour, and Til Laddo, which is made with sesame.

But, these ain’t no Jalebi, I know. You could try and fry yours in a vegan-friendly oil… but I can’t guarantee that how that’ll turn out.
Instead, why not try my Gluten-Free Chocolate Cake instead?

Gluten Free Vegan Chocolate Cake

Ingredients

  • 1/2 cup Jowar flour,
  • 1/2 cup Ragi flour
  • 1/2 tsp Baking powder
  • 1/2 cup Cane Sugar
  • 2-3 tbsp cocoa powder
  • 1 cup Applesauce
  • 1/4 cup Oil

Preparation

  1. Preheat the oven to 160 degrees Celsius, grease a round baking pan and keep aside.
  2. Sieve together the flours,baking powder, cocoa and keep aside.
  3. Whisk together the applesauce,oil and sugar, beat together until the sugar gets dissolves.
  4. Add the dry ingredients to the wet one. Dont over beat.
  5. Bake for 30 minutes till the toothpick comes clean at the center.
  6. ENJOY!

Gluten Free Amaranth Flour Cake

Amaranth flour – exotic as it sounds, its actually very indigenous and local to India. This is the first plant-based flour I actually tried baking with. I am not exactly certain of why or what made me explore this flour except that I was bored of doing bakes with wholewheat and more wholewheat !

I had moved onto the millet based flour bakes but Amaranth flour opened my eyes to a world of possibilities. The reason for that was – its high protein and less starchy, it is gluten-free and it also works beautifully in vegan bakes as well.

The purist in me wanted to work with flours that are truly or rather naturally gluten-free rather than the packaged “gluten-free” versions of flour.

So when The Indian Express newspaper wanted me to share a unique recipe particularly one that gives insights into how baking can actually be totally healthy, albeit different from what people defined baking as, I knew that I wanted to share this recipe.  So give it a shot and do share how your Amaranth flour cake turns out !

Recipe Ingredients

1 cup – Amaranth flour

1/2 cup – Almond flour

1 cup – Organic jaggery powder

1/2 cup – Oil
