Of celebrating festivals & Wholewheat Cane Sugar Mawa Cake

Early yesterday morning I saw a post on a baking forum where a baker who had baked beautiful bread in the shape of Ganpati Bappa. As an offering to the God on Ganesh Chaturthi.

Instead of appreciating her love through one of the most important basic necessities of life which is food, some people trolled her about how one could ‘slice, heat and eat’ God. Let me explain how you can do that – when you cut and burn forests, when you harm other living beings.

When you don’t realise that God is this – the one in the picture above. Who is used and abused by us. Whose abode or home we use and abuse. And the day this form of God becomes extinct, we won’t be worrying about baked bread.

So respect this gift and that is what true celebration of the God you believe in, is. Happy Ganesh Chaturthi.

On that note, let me share what I baked after we got back from the park, that the children relished and are asking for a second round of!

Wholewheat Cane Sugar Mawa Cake – with Jus Amazin’s 10 minute Almond Milk

1-1/4 cups Wholewheat flour

85 gms unsweetened Mawa/Khoya

1 cup Cane sugar

1/2 teaspoon Baking powder

1/4 teaspoon Cardamom Powder

5 tbsp butter, softened

2 free-range eggs ( you can use 1/2 cup applesauce if you don’t want to use eggs)

8-9 tbsp Almond milkMethod Sift the wholewheat flour, baking powder, cardamom powder together well. Whisk or use a beater to first mix the butter, sugar and mawa. Then add the eggs one at a time to make a smooth mix.Add the sifted dry mix to this alternating it with the almond milk.

Preheat the oven to 170 degrees C. Prepare the tin you want to use. Pour the batter. Bake the cake for around 45 minutes or until the toothpick in the centre of the cake comes out clean.
